HIBOU, which means owl in French, is a red wine named after the two owls that frequent the pine trees next to the fields by the village at Domaine de la Senche.
The wine is an elegant assembly of hand-picked Syrah, Carignan and Grenache grapes. Before maceration, the grapes are sorted and destemmed. Fermentation is done in temperature controlled, 50hl stainless-steel tanks. After fermentation, the wine remains in the tanks for 6 months before being bottled.
